A perfect growing season and our unrelenting pursuit of quality have combined to produce a beautiful Central Otago Pinot Noir. It has aromas of truffle, spice and dark fruit. On the palate lush ripe cherry and plum flavours overlie subtle spice and toasted French oak. Tannins are silken and the finish is long.

Winemakers' Notes - 2008

Grapes hand harvested 3rd April 2008. pH 3.4 TA 8.7 Brix 24

Bunches completely destemmed, 9 day cold soak followed by fermentation with wild and inoculated yeasts. Hand plunged 2-3 times per day and fermented to dryness over 7 – 9 days. After a post fermentation maceration the wines were matured in French oak barriques (33% new) for 10 months. The best barrels of wine were then carefully selected for blending . We have selected Diam closures for our wine as this replicates the characteristics of a traditional cork with no risk of cork taint.
